Answer: Hi Starsha,
Yes, freeze-drying herbs is better than drying. This gentle process preserves about 97% of a food’s nutritional value, including essential oils, and doesn’t alter the food’s molecular structure. Compare this to drying, which preserves about 60-75% of the constituents.
Freeze-dried herbs can have more flavor than air-dried herbs, but they may crumble due to their crunchier texture. Overall, freeze-dried herbs offer superior preservation of flavor and nutrients compared to air-dried herbs. While they may be more prone to crumbling due to their crunchier texture, the enhanced flavor and higher nutritional value can make them a better choice for many culinary applications.
