Weekly Garden Tip: 

While the primary purpose of curing is to preserve produce, it can also affect the nutritional content. In some cases, curing can increase certain nutrients, like beta-carotene levels in sweet potatoes. When curing, the key is to keep consistent conditions. To avoid stress on the produce that can lead to spoilage, maintain consistent environmental conditions during the curing process.

Perfecting Vegetable Preservation for Nutrition and Flavor

Every vegetable has specific preservation methods that work well, while others may not give you the desired results. This is why expert food preservationists tailor the preservation methods to each type of vegetable so that freshness and flavor are, well, preserved in the end result.

Question: How do I keep stray cats and birds away? – Karen

Answer: Hi Karen,

The only for sure way to keep small animals out of the garden is to enclose it entirely. This can be pretty costly! Many people try luring them away, planting things away from the garden that are more enticing. So for cats, you might plant some catmint away from the garden in a spot with soft soil that invites them to use that area as a litter box instead. For birds, it might be planting a sweet abundant berry that the bird loves far away from your garden.

You can also try bird netting to keep the birds away and automatic motion sensor sprinklers to keep the cats from your harvest so long as the water stream doesn’t hit your plants.

This costs less than enclosing your garden but the netting is a bit more time consuming and the sprinklers are not a guaranteed way.

Long term, it will be less stress and time to enclose the garden.
