Weekly Garden Tip: 

To roast chicory for your coffee alternative, wash the roots completely clean of debris. Cut all the tough straggler roots off the main root first and finely chop. Take a mandolin or carrot peeler and julienne the remaining root. Chop all the pieces as evenly as possible.

Roasting for 15 minutes will give you a nice chicory tea, but it won’t give you the coffee-like flavor. Roast in the oven at the lowest temperature setting until pieces are brown. For a lighter coffee, roast until medium brown. If you’re like me and want your chicory beverage to resemble motor oil, it may take much longer.

If you have a dehydrator, consider dehydrating the pieces first, then roasting to reduce oven time.

Question: I need to learn how to capture and save water (like in a rain garden but I don’t know how to locate the contours so as to place it correctly.) I am in south Mississippi. – Lucy

Answer: Hi Lucy,

Here are a couple of tips to get you started with your rain garden. First, be sure you amend the soil in the area chosen for rain catchment. Many areas in Mississippi are clay soils, which will not retain moisture due to the lack of organic matter. Check out this resource on the Soil Resource Areas Of Mississippi.

To locate the areas where you’ll want to focus on creating a rain garden area, you’ll want to watch how the water flows when it rains, especially during a heavy rain. Areas where small rivers form are an indication of places that are lower than the rest of the area and places where water pools are the lowest areas.

You can also adapt the land for rainwater catchment. For further learning, google Permaculture: Berms and Swales.
