Did you know that fresh salad from the garden tastes SWEETEST in the spring and in the fall?
Well, more accurately, your salad greens and root vegetables (like carrots) taste sweeter the COLDER it is outside when you harvest. That’s because the carrot is protecting itself from the cold. It wants to survive. So it stores extra sugars to protect its cells from formingย ice crystals. And that sugar storage prevents those cells fromย rupturing duringย cold frosts. Isn’t that cool?! Your plants are so smartย ๐ And lucky for us, that makes them TASTE BETTER, too!
