Dear Arti:
Question: I preserved some strawberry-rhubarb and when I took it out of my pressure canner it had separated and had lots of air bubbles. Is this normal? Also, is boiling better than pressure cooking for strawberry rhubarb?
Also a cooking tip for strawberry-rhubarb.. To maintain color, I cook a beet and add 4-8 ounces of shredded beet and juice to the mixture. – Larry B.
Answer: Hi Larry,
Strawberries naturally have a lot of air in them, so they float and the jam foams. So based on what you’re describing, this alone isn’t a cause for concern. However, keep in mind I can’t see what you’re looking at, so if you’re at all worried, search for a home canning group in your area and see if you can find a seasoned canner to check that out for you.
To maintain color, keep your jars in total darkness. You can also add lemon juice. Just remember to be sure to follow all safety canning guidelines in regards to recipes.
